Today I had some time so I did something I haven't done for a long time, I cooked chicken soup. I haven't figured out if it is soup or stew, what is the difference? When I look in the dictionary it says it depends on what the chef calls it, and I call this chicken soup and I'm the "chef" so it is soup. It is thick and not much liquid left after it is finished, so it could be called a stew if the "chef" decided to call it that!

A few years ago I was out of a job and tried to start an ESL school using a unique way I really believed was the best way to learn English. The Callan Method of Teaching English was a great way to learn English, but I'm not a marketing person and a school is a business. I was out of English for 2 years. In my previous job I became good friends with a manager of a hotel that was very good in the kitchen. When I was out of work she hired me to teach English to her housekeeping maintenance staffs. She was great and paid me $100/hr and got me other jobs also.

On Thanksgiving Barbara suggested I make turkey soup from the carcass of the bird after we ate all the meat. I didn't know how and she told me how to do it. I cooked that soup and then I started a routine of cooking chicken soup the same way every week. I cooked a big pot and when the kids came over they loved it. My youngest daughter would also ask me to make my soup when she came over. She made the suggestion that I make a lot of soup and take it across the street where they were doing construction and sell it to the construction workers. I never did that, but it was nice to know she really thought my soup tasted that good.

After making the soup every week for about 4 months I stopped making my soup. The soup was very nutritious and I was able to save money by eating it for lunch and dinner. It was also delicious and low calorie. It helped me loose weight. I didn't make my soup for about 2 years. I decided I really wanted to loose weight so I decided to go on a strict diet using my soup. For breakfast I would eat Special K and then for lunch a dinner I would eat my soup. For snacks I would eat an apple. I combined that diet with exercising twice a day for 20 minutes a time and I lost 20 pounds (and my sister says I lost 20 years).

I haven't made my soup for almost 2 years and today I was grocery shopping and decided to make my soup again. I got the cheapest chicken I could, $5 for the chicken, then bought mushrooms, onions, red potatoes, diced garlic, and some more spices. I got home and boiled the chicken after I took off the skin. I boiled it long enough for the meat to fall of the bones and then took out the bones. I chopped the vegetables into large cubes and threw them in. I boiled that for a while and then put all the different spices I could find. I want my soup spicy enough to make me sweat when I eat it. After I finished cooking and putting it away in individual servings I ate finally ate some soup. It was fantastic!! I was sweating and my nose was running and my mouth was on fire. After I ate it I was thinking I should finish losing the weight I want to lose, another 10 pounds.
